Chipotle Chickpea Wrap
“Chickpeas… nature’s powerhouse” – The Vegan Mary

INGREDIENTS
1 t lemon juice
½ t onion powder
3 T Frank’s Red Hot (or Frank’s Buffalo Sauce)
¼ cup vegan mayo
1 (15 oz.) can chickpeas, drained and rinsed (See tips.)
1 stalk celery, diced
1 carrot, shredded
Salt and pepper to taste
DIRECTIONS
Add first three ingredients to high speed blender. Then add chickpeas. Blend until smooth.
Pour contents of blender into bowl.
Fold in celery and carrots. Add salt and pepper to taste.
Nestle into a nice spinach wrap or collard greens for a quick, nutritious lunch!
TIP: Save that chickpea juice! (You can freeze for up to two months.) Aquafaba can be used in all sorts of tasty vegan desserts – mousses, meringues, macarons, muffins. And equally charming sweets that don’t start with M… frostings, cookies, brownies, breads, rolls. I hope I’ve convinced you. My sweet tooth and I are now excusing ourselves for a snack.
