Arugula Spinach Pesto Pasta

INGREDIENTS
½ lb pasta of your choosing (I’m a sucker for farfalle)
½ cup raw walnuts
¾ cup olive oil
1 T + 1 t garlic, minced
½ t lemon juice
½ t maple syrup
1 cup spinach
2 cups arugula
Salt to taste
OPTIONAL: 1/4 cup grated parmesan cheese (Recommended brand: Violife)
DIRECTIONS
Prepare pasta as directed. (Drain but don’t rinse once complete.)
Place walnuts in high-speed blender. Pulse until finely chopped.
Add all remaining ingredients to high-speed blender (in the order in which they are listed). Blend until you get a beautiful green, thick sauce.
Add additional salt, if needed.
Toss warm pasta with pesto.
Top with grated parm, if you like.
TIP: This pesto is an all-around dynamo, try it over roasted vegetables!
