Simple Spiced Nuts
“Nuts are always a good idea.” – The Vegan Mary
Stress Scale: ✅ | Prep Time: 5 min | Total Time: 65 min | Servings: 4
INGREDIENTS
½ cup raw cashews
½ cup raw pecans
½ cup + 1 T water
4 t brown sugar
1 t cinnamon
½ t cayenne
1 t nutmeg
½ t salt
DIRECTIONS
In small bowl, mix water and spices (except salt) together.
Pour mixture into skillet over medium-high heat. Bring to a bubble.
Add in nuts, stir to coat completely. Monitor heat and adjust down if necessary. And keep on stirring! Cook for 3-4 minutes, until fragrant. The water should be evaporated.
Spread nuts in a single layer onto a parchment-lined baking sheet. You may need to separate any stubborn nuts from their friends. Sprinkle with salt. Let sit at room temperature to completely cool. Mine took about an hour.
Snack away or pack away!
TIP: These are lightly spiced, quite versatile nuts. Feel free to amp up your favorite flavors, just don’t skimp on the brown sugar – it’s key for caramelization. I refrigerate leftovers for maximum freshness. You can also freeze.
