Almond Joy Bites

INGREDIENTS:
10 dates, pitted
½ cup whole raw almonds + 10 whole raw almonds
¾ cup almond butter
¾ cup shredded coconut, divided
½ t salt
DIRECTIONS:
Pulse ½ cup almonds in high speed blender until fine.
Add almond butter, dates, and salt. Pulse until well mixed.
Place mixture into bowl. Mix in ¼ cup shredded coconut.
Using clean hands, make a ball of the mixture. Place whole almond in the center, roll again to “seal” the almond in.
Place ½ cup shredded coconut in shallow bowl. Roll each ball in coconut to cover thoroughly.
Place finished bites in the fridge for about an hour to set.
Store in fridge (for a few weeks) or in freezer (for a few months). Or just eat them all. Whatever.
TIP: I usually make a double batch and then store in freezer. I pull a few out every week for a healthy, easy snack.
