Almond Joy Bites

“Candy bar flavor cleverly disguised in health food.” – The Vegan Mary

Stress Scale: ✅ | Prep time: 10 min | Total time: 1 hour 10 min | Yield: 10 bites 

INGREDIENTS:

  • 10 dates, pitted 

  • ½ cup whole raw almonds + 10 whole raw almonds

  • ¾ cup almond butter  

  • ¾ cup shredded coconut, divided 

  • ½ t salt 

DIRECTIONS:

  1. Pulse ½ cup almonds in high speed blender until fine.

  2. Add almond butter, dates, and salt. Pulse until well mixed.

  3. Place mixture into bowl. Mix in ¼ cup shredded coconut.

  4. Using clean hands, make a ball of the mixture. Place whole almond in the center, roll again to “seal” the almond in. 

  5. Place ½ cup shredded coconut in shallow bowl. Roll each ball in coconut to cover thoroughly.

  6. Place finished bites in the fridge for about an hour to set.

  7. Store in fridge (for a few weeks) or in freezer (for a few months). Or just eat them all. Whatever. 

TIP:  I usually make a double batch and then store in freezer. I pull a few out every week for a healthy, easy snack.
