Looking for some Irish comfort food? Here’s the perfect equation. Mashed potatoes + greens + leeks = Colcannon

Stress Scale: ✅✅ | Prep time: 10 min | Total time: 30 min | Servings: 6

INGREDIENTS:

  • 5 Yukon gold potatoes, cut into large cubes

  • 2 cups kale, chopped

  • 2 leeks, chopped

  • 1 T garlic, minced

  • ½ cup veg broth

  • 1 cup non-dairy milk

  • 1 T sour cream (I used Tofutti brand)

  • 2 T butter

  • Salt and pepper to taste

  • Olive oil for sautéing

  • Green onion for garnish

DIRECTIONS:

  1. Boil potatoes in salted water for 15 minutes or until tender. Drain. Set aside.

  2. In large sauté pan, sauté leeks in olive oil until soft (about 6-8 minutes). Stir continuously.

  3. Add garlic, keep on stirring, and cook for about 2 more minutes.

  4. Then add veg broth and kale. Cook until kale is wilted (and broth is gone). Remove from heat.

  5. Add in potatoes, milk, sour cream, and butter. Mash with potato masher until everything is mixed and well smashed.

  6. Taste. Add salt and pepper as needed. And more milk, sour cream, or butter if desired.

  7. Serve in bowl with a garnish of green onions and a giant spoon.  

TIP: I always leave the skins on my potatoes for texture and nutrients.
