Chickpea Chicken Salad

INGREDIENTS
2 (15 oz.) cans chickpeas, drained and rinsed
3/4 cup grapes, halved
3/4 cup vegan mayo
1.5 tbsp Dijon
Juice of one lemon
3 ribs celery, chopped
1/4 cup red onion, diced
1/2 cup slivered almonds
3 tbsp Italian parsley, diced
3-4 tsp poultry seasoning
Salt and pepper to taste
DIRECTIONS
Mash most of chickpeas with fork (but leave some whole).
Mix all ingredients in bowl.
Serve chilled.
TIP: Tastes even better after a day or two.
