Chickpea Chicken Salad

INGREDIENTS

  • 2 (15 oz.) cans chickpeas, drained and rinsed

  • 3/4 cup grapes, halved

  • 3/4 cup vegan mayo

  • 1.5 tbsp Dijon

  • Juice of one lemon

  • 3 ribs celery, chopped

  • 1/4 cup red onion, diced

  • 1/2 cup slivered almonds

  • 3 tbsp Italian parsley, diced

  • 3-4 tsp poultry seasoning

  • Salt and pepper to taste

DIRECTIONS

  1. Mash most of chickpeas with fork (but leave some whole).

  2. Mix all ingredients in bowl.

  3. Serve chilled.

TIP: Tastes even better after a day or two.
