Classic Tomato Bruschetta

INGREDIENTS
1 baguette
1.5 lb. fresh tomatoes, diced (the best ones you can find)
8-10 fresh basil leaves, julienned
1.5 T garlic, minced
4 T + 1 T olive oil, divided
1 T balsamic vinegar
Salt and pepper to taste
DIRECTIONS
Fold all ingredients together in bowl (no, not the baguette). Let marinate for 30 mins.
Prior to assembly, preheat oven to 400°F. Cut baguette into ¼ inch thick slices. Brush one side with olive oil.
Toast slices of baguette (oil side down) in hot oven for 10 mins or until the slices are a golden brown.
Let bread cool before topping with tomato mixture.
Serve on gorgeous platter and try to reminder yourself to save room for the main course.
TIP: Italian cooking is all about the ingredients! Use the freshest (organic if you can!) tomatoes and basil. A high-quality olive oil will also pay dividends here!
