Marinated Mushrooms
I knew I was doing something right when a true Italian chef (for real, he grew up in Sicily) asked for this recipe. Marinate on that!

INGREDIENTS:
8 oz. canned mushrooms, drained
¼ cup olive oil
¼ cup + 1 T red wine vinegar
2 T garlic, minced
¼ t dried basil
¼ t salt
¼ t pepper
1 t sugar
2 bay leaves, whole
DIRECTIONS:
Mix all ingredients together in a small saucepan.
Bring to a boil, then simmer for 10 minutes.
Place in airtight container (I used bell jar) and let sit in fridge for 1-3 days. When ready to serve, remove bay leaves, reheat over medium flame. Serve as savory complement on cheeseboard or as easy side for your favorite dinner.
TIP: Patience is a virtue. The longer you wait, the happier you will be.
