Roasted Garlic

INGREDIENTS:
3 whole heads of garlic
3 T olive oil
DIRECTIONS:
Preheat oven to 400°F.
Peel outer (papery) layers from the garlic blubs. Keep the cloves’ skins intact.
Cut off about 1/2 inch from the top of the bulb. This will expose the cloves.
Place garlic bulbs in muffin tin (this keeps them from rolling all over the place) and drizzle with oil. Don’t be afraid to use your (clean) hands to rub in the oil. You want the oil to infiltrate the nooks and crannies.
Cover with foil and bake for about 35 minutes or until the cloves are browned.
Cool until you can touch comfortably. Remove the cloves from their skins, either with your hands or a small knife. If you get lucky you might be able to squeeze them out, intact.
The serving options abound! Enjoy the savory cloves solo. Smash and use in your fav dip. Make garlic mayo. Rub on veggies or bread. Use as a pizza topping. Serve in pasta. Incorporate into a baked potato bar. Add to a can of (soup/salsa/sauce). Feature on your next cheeseboard. Did I mention you could just pop them into your mouth?
