Mushroom Galette

Ingredients

  • 1 sheet puff pastry (we used Pepperidge Farm)

  • 14-16 oz mushrooms, chopped

  • 1/2 onion, diced

  • 2 T minced garlic

  • 2 handfuls spinach, chopped

  • 1 T flour

  • 1 t thyme

  • 1/4 c vegan sour cream

  • 1/8 c butter

  • 1/2 c vegan feta crumbles

  • 1 T oil for sautéing

  • 1/4 t salt

  • 1/4 t pepper

Directions

  1. Preheat oven to 400.

  2. Sauté mushrooms with salt and pepper, set aside.

  3. Sauté onions & garlic. Turn heat to low, stir in sour cream and butter. Once melted, add flour, stir. Add spinach and thyme. Mix in mushrooms.

  4. Roll out pastry (not too thin) and place on sheet pan.

  5. Spoon mushroom mixture into center of pastry, leaving about 1 inch from each side. Fold edges in and brush with water.

  6. Sprinkle with feta and bake for 25 minutes.
